- ½ Red cabbage, shredded
- ½ Savoy cabbage, shredded
- 500g string celeriac
- 3 red onions, sliced half moon
- 2 sweet potatoes, peeled and julienne
- 2 large parsnips, peeled and julienne
- 1 celeriac, peeled and julienne
- Prepare all the ingredients and mix together.
- Finish off with a citrus dressing.
- Juice and zest of 3 oranges
- Juice of 1 lemon
- Juice of 1 lime
- 125ml olive oil
- Salt and pepper
- Place all the ingredients in a bottle with a lid and shake well.
- Pour over the dry slaw and check the seasoning.
