Quick and easy Toulouse sausage and mixed bean cassoulet

IngredientsToulouse sausage and mixed bean cassoulet (serves 4)

  • 4 Toulouse sausages
  • 1kg mixed bean salad
  • 25ml olive oil
  • 75g fresh breadcrumbs


  1. Preheat oven to 180°c
  2. In a large pan fry the Toulouse sausages until golden brown, then transfer to a baking dish.
  3. Warm the mixed bean salad in the same pan that was used for the sausages; pour the warmed mixed beans over the sausages.
  4. Combine the olive oil and the breadcrumbs and sprinkle over the sausage and bean mix.
  5. Place the baking dish in the oven and cook for 10 minutes or until the breadcrumbs are golden brown.

Hints and tips – if a wetter cassoulet is required, add a little tinned chopped tomato to the bean salad.
