Fresh soft pumpkin taco

Ingredients

  • 1 red pepper
  • 1 yellow pepper
  • 1 green pepper

Method

  1. Pre-heat the oven to 260˚C.
  2. Cut the peppers into quarters, removing the seeds and membrane.
  3. Place on a baking tray, roast until the skin blisters and turns black.
  4. Remove from the oven and place in a large bowl, cover tightly with Clingfilm, and allow to cool.
  5. Once the peppers have cooled, peel the skins off the peppers and cut into strips.

Roasted Crown Prince purée

Ingredients

  • Half a small crown prince pumpkin (about 2 pounds)
  • 1 tbsp rapeseed oil
  • 1/2 tsp salt
  • 1/4 tsp course black pepper
  • 1 tbsp butter
  • Juice of a 1/4 lemon

Method

  1. Preheat the oven to 180C.
  2. Peel the skin off the crown prince and remove the seeds.
  3. Roughly cut into same size pieces.
  4. Place on a roasting tray, sprinkle with rapeseed oil, salt and pepper.
  5. Place in the oven and roast for about 25mins or until the pumpkin is very soft.
  6. Remove from the oven, and place into a large bowl.
  7. Using a hand blender, blend the pumpkin to a pulp.
  8. Add the butter and check the seasoning.

Chunky guacamole

Ingredients

  • 2 whole avocados
  • 2 plum tomatoes
  • 1 pieces of spring onion
  • 20g whole coriander
  • 1 lime
  • 1/2 tsp salt
  • 1/4 tsp course black pepper

Method

  1. Remove the pip and skin of the avocado.
  2. Squeeze the lime juice over the avocado and mash with a fork or a small hand blender.
  3. Cut the plum tomatoes into quarters and remove the seeds. Dice finely and add to the mashed avocado.
  4. Finely slice the spring onions and chop the coriander, using both the leaves and the stalks. Add both to the avocado mix.
  5. Add seasoning, plus more lime juice if needed.

To build the pumpkin tacos

  1. dd some pumpkin purée to half of the taco or wrap and top with the mixed peppers.
  2. Serve with the chunky guacamole and half a lime wedge.
  3. To spice it up, you can add a teaspoon of chipotle chilli jam when making the wrap or taco.
